Pigeon breeding

You will find meals prepared from our organic pigeons on the restaurant seasonal menu. We are proud of that because we believe that there are not many restaurants that can say so.

The pigeons are bred in Liboce and are of a specialized meat breed Texan. This breed has highly muscled breasts and the pigeons mostly cannot fly because of their weight. Unlike poultry, the pigeon meat has full aromatic flavour and dark colour. It is very tender and easily digestible.

Young pigeons belong among the traditional delicacies found also on royal tables. They are highly valued by gourmets all over the world.
